Not in the mood for a sweet breakfast? This savory oatmeal is the perfect alternative for all my savory-toothed friends out there! Not traditional by any means, but it's the perfect way to start your day with fiber, protein, and flavor! The best part is that it only takes 10 minutes to make - because I know time is valuable, especially in your morning routines.

Ingredients:
1/2 cup rolled oats
1 cup oat milk or non-dairy oat beverage
1/3 cup liquid egg whites
1/2 tsp ground paprika
1/4 tsp sea salt or kosher salt (for oatmeal mixture)
1 tsp sofrito or italian herb seasoning
1/4 tsp sea salt or kosher salt (for egg whites)
Instructions:
In a bowl, add rolled oats, oat milk/beverage, paprika, and salt. Stir until evenly mixed.
Microwave for 2 minutes on high heat.
Stir and microwave for 3-4 more minutes (in 30 second intervals, stirring in between, to avoid overflow of milk).
Set aside to cool while preparing the egg whites.
In a small bowl, mix egg whites, salt, and sofrito/italian herb seasoning.
Heat olive oil in a fry pan or skillet on medium / medium-high heat.
Add egg white mixture to fry pan/skillet.
Fry for 3-4 minutes, or until the egg whites are at your desired temperature/texture.
Add egg whites on top of oatmeal, and serve / enjoy!
