Raspberry Jam

If you're looking for an alternative to store-bought jar jam, this might be your next recipe to try! I personally like having control over the amount of sugar in my recipes, as well as the exclusion of preservatives that are often found in pre-packaged foods. Luckily, this recipe only takes 10 minutes (or less) to make! Now, you can easily make a batch of high fiber, preservative-free jam and store it away for the week. The best part is: if you're not a fan of the tart-ness of raspberries, you can replace the raspberries in this recipe with any other berry variation (i.e. blueberries, strawberries, pineberries).

Ingredients:

  • 6 oz fresh raspberries

  • 2 Tbsp lemon juice (fresh-squeezed works best)

  • 2 Tbsp raw cane sugar

  • 2 Tbsp whole black chia seeds

Instructions:

  1. Heat a small sauce pan on medium heat. Once heated, add raspberries, lemon juice, and sugar.

  2. Stir frequently and use your cooking utensil to mash the berries gently as they cook.

  3. Once the mixture is simmering or bubbling, turn the heat down to medium-low and add the chia seeds.

  4. Continue to simmer, stirring frequently, until the mixture thickens (ideally the consistency of a sauce). This should take approximately 2-4 minutes.

  5. Remove from heat and transfer mixture to a refrigerator safe container (preferably a glass container or jar).

  6. Let cool at room temperature for 20 minutes, then store in the refrigerator until ready to use. If using immediately, refrigerate for about 15-20 minutes prior to using in order to let the mixture settle.
