Coco-Blueberry Yogurt Bark

This yogurt bark recipe is everything you need on a summer day if you're craving some dessert but don't want the guilt that comes along with ice cream or chocolate! The combination of the crunchy granola and the juicy frozen blueberries compliment the creamy coconut base so well - it's a must try!



Nutrition of Ingredients:


Greek Yogurt

  • high in protein and vitamin B12

  • contains probiotics

Blueberries

  • high in vitamin C, vitamin K, and fiber

  • contains anti-oxidant properties

  • low-calorie source of sweetness

Prep Time: 5-10 min

Freeze Time: 2-3 hours


Ingredients:

  • 2 cups coconut flavored greek yogurt

  • 1/4 cup fresh blueberries

  • 1/2 cup granola of choice

  • 2 Tbsp unsweetened coconut flakes

  • 1/4 cup chocolate chips

  • Optional: 2 Tbsp almond butter

Instructions:

  1. In a metal tray, lay down parchment paper.

  2. Pour the yogurt onto the parchment paper and spread evenly using a baking spatula or spoon.

  3. Sprinkle granola, blueberries, chocolate chips, and coconut flakes evenly across the yogurt. If needed, use the spatula to lightly press the toppings into the yogurt.

  4. In a microwave safe bowl, heat almond butter for 30 seconds.

  5. Drizzle melted almond butter evenly across the bark.

  6. Freeze for 2-3 hours or until the yogurt has frozen completely.

  7. When ready to eat, thaw for 3-5 minutes and enjoy!
