A light and fruity salad recipe; perfect for warm weather days! This recipe combines red apples, dried fruit, a variety of nuts, and a delicious vegan cashew butter dressing to create a delicious asian-inspired salad.

Red Apples

  • high in vitamin C and fiber

  • contains anti-oxidant properties

Ingredients:

  • 2 cups mixed greens

  • 1/8 cup vegan shredded cheese of choice (if preferred, you can use dairy cheese instead).

  • 1 small red apple, diced

  • 2 Tbsp vegan cashew butter dressing (can be found at Trader Joe's).

  • 1/4 cup home-made gut nut mix (can be substituted with other nut/trail mixes if desired).

Instructions:

  1. Add the mixed greens, diced apples, gut nut mix, shredded cheese, and cashew butter dressing to a salad bowl.

  2. Mix well and serve immediately!
