A light and fruity salad recipe; perfect for warm weather days! This recipe combines red apples, dried fruit, a variety of nuts, and a delicious vegan cashew butter dressing to create a delicious asian-inspired salad.

Ingredients:
2 cups mixed greens
1/8 cup vegan shredded cheese of choice (if preferred, you can use dairy cheese instead).
1 small red apple, diced
2 Tbsp vegan cashew butter dressing (can be found at Trader Joe's).
1/4 cup home-made gut nut mix (can be substituted with other nut/trail mixes if desired).
Instructions:
Add the mixed greens, diced apples, gut nut mix, shredded cheese, and cashew butter dressing to a salad bowl.
Mix well and serve immediately!
